Gourmet Asian Fusion


Our class H425 under Catering Management, conceptualized our first sumptuous dinning experience entitled "Gourmet Asian Fusion" Obviously, this is a combination of different cuisine from Asia. We made this in a simple manner, because were just students implementing all things that we've learned in past three years. From proper service to the use of different techniques of cooking. 



A classy Asian type dinning experience at Le Cafe Lyceum of the Philippines University Manila.
I used to captured our first pre-fixe dishes made by chosen student of our class. A full course meal from appetizer to dessert doing the plate service.



Cream of Mushroom Soup


The first dish that served is Cream of Mushroom Soup, what I love in this soup is really tasteful, thick, really smooth and creamy. 


Grilled Watermelon and Arugula Salad

Its really hard to deal with watermelon because it contain 92 % of water. Grilling it makes more tasteful and I love making it so savory with simple honey vinaigrette.


Braised Pork Belly with Jicama Slaw and Parsley Pilaf


 This main course composed of starch, protein, vegetable and sauce. The pork belly was cooked so finely, it is really soft and tender. I love robust flavor of meat under the red wine reduction. The Jicama Slaw is really tangy, overpower of acid but delicious. I love Rice Pilaf the way it cook. Over all it achieved the balance and harmony of this dish.

Coconut Crusted Fish with Guava Curry Sauce, Haricot Vert and Wasabi Mashed Potato

Another variety of Main Course. This awesome Coconut crusted fish using creamy dory, has crispy crust and its really delicious combined with thick, fruity and flavorful Guava Curry Sauce. The wasabi mashed potato has a kind grainy texture but its really delicious has right amount of wasabi and not too spicy.


Green Tea Panna Cotta with Cardamom Caramel


This is the simple way of presenting the dessert. It has right amount of sweetness but needs more time set to achieve the jelly texture of panna cotta. But I really love it :)



Finally were done on our first pre-fixe, just what our professor said, We made a Good Job :) I' am really happy and satisfied to the result of this function.

PS I assigned as Barista working on Bar Area. Lol :)
